There are few better combos in this world than chocolate + peanut butter. Case in point:
I tried this recipe from Tried and Tried again this weekend and with just a few tweeks found them to be DIVINE!
Chocolate Covered Peanut Butter Bars
1 1/2 C Flour
Frosting:
½ C Butter (1 stick)
3 ½ C Powdered Sugar
2 T Cocoa
¼ C Milk
1 tsp. Vanilla
Preheat oven to 350 degrees. Mix the flour, salt and baking soda and set aside. Cream butter, sugars, vanilla, 1 cup of peanut butter and eggs together. Add the flour mixture and beat until combined. Stir in Oats and mix in until combined. Take a large cookie sheet and spray it with cooking spray. Spread cookie mixture into pan and cook for 12-15 minutes (I had to cook about 18 min.) until it is golden brown.
While cookie is in oven, beat 1 cup of creamy peanut butter until it turns a lighter color. When the cookie gets done, let it cool for a few minutes and then spread peanut butter over the top with a spatula. (Put it on, let it sit for a second and then spreading will be really easy as the peanut butter melts)
Over the stove, heat 1/2 cup butter until it is melted. Add in 1/4 cup milk and 2 T of cocoa. Make sure you whisk the chocolate in really well…(you can see some of the lumps I had left):) Bring to a boil, and then remove from heat. Add vanilla and powdered sugar in beating until you get a really creamy mixture. Pour over the peanut butter and spread out. (I actually let the peanut butter set and cool before I did this last step and it worked really well) Let the bars sit and then ENJOY!
