There are so many fun new treats that I love to try. I was pretty excited when Biscoff Spread contacted me and asked me to try their spread and whip up a new recipe with it. How can I refuse that…a treat +a new spread. I couldn’t resist! I needed to make a treat for family night one week and had a cake mix in the cupboard, so I knew exactly what I would pair with it…a nice Biscoff Buttercream. Do you recognize the name Biscoff? (You will recognize the taste of this yummy spread as soon as it hits your mouth!) I was introduced to the Biscoff cookie awhile ago on an airplane ride I took. We were given them as snacks and they were delicious. They have just a hint of cinnamon and brown sugar and are nice and crunchy. YUM! The best part is that they have made these delicious cookies into a spread that has sold in Europe like wildfire! It is made of Biscoff cookies and has no trans fat, all natural ingredients, contains no nuts and is even vegan! My husband has been enjoying it on pancakes, toast and especially straight from the jar! With as much as he loves it, I knew this would be perfect in the buttercream I whipped up.
Biscoff Buttercream:
2 sticks salted butter, softened
3-4 cups powdered sugar
2 tbsp. Biscoff Spread
2 tbsp. milk
1 tsp. cinnamon
Mix all of the ingredients together. If you need it thicker, add more powdered sugar. If you need it thinner, add more milk.
I added mine on top of a yellow cupcake and they were divine! I also added a small sprinkle of cinnamon as well to make it all pretty!
